Tasty Tuesday: Apricot Chicken

My bff shared this with me awhile ago and I finally decided to try it. By finally I mean I remembered to buy the apricot preserves. :) This is soooo easy and extremely tasty! My kids are super-duper picky and they both really enjoyed it.


Apricot Chicken

  • 4 chicken breasts (I used 8 chicken tenderloins)
  • salt and pepper to season
  • 1/2 cup apricot preserves
  • 2 tsp lemon juice
  • 2 tsp soy sauce
  • 1/4 tsp onion powder
Place chicken in skillet and season with salt and pepper. Cook until done. I browned mine because I like my chicken a little crispy.

In a separate small bowl mix together the remaining ingredients and pour over cooked chicken. The mixture will be a little chunky and runny but will turn into a glaze as it heats up. Remember the longer you cook it, the more the glaze with thicken.

You can pair this with rice and a veggie, such as broccoli. You'll LOVE it
