Taste of Fall: Chocolate Chip Pumpkin Muffins

For awhile now I had been hearing about these muffins. I didn't really think much of it because I was not a big fan of pumpkin. But things changed last year when my mom made some Pumpkin Crunch bars and she bugged me until I tried them.

I fell in love with pumpkin and the 31 years of hatred went away.

So this year when I saw my friends talking about making these I wanted them. But I couldn't find a can of pure pumpkin anywhere. All the stores were out. So I was thoroughly aggravated...until tonight when I opened my cupboard and waaay in the back was a can of pumpkin. Ummm, oops?

 So it was on like Donkey Kong! :)

Here's the recipe if you want to make some. :)

Chocolate Chip Pumpkin Muffins
1 box of spice cake mix (do not make according to box)
1 small can pure pumpkin (not the pie mix)
1/2 bag to 1 bag of chocolate chips (depends on how chocolately you want it - I used the whole bag)

  • Mix the spice cake mix and the pumpkin together. 
  • Fold in the chocolate chips. 
  • Put in muffin tin (either greased or use papers). Makes 12.
  • Bake at 350 degrees for 20 to 25 minutes.
